Coffee Cake
Aunt Esteleen’s Coffee Cake

1 cup margarine (two sticks)
2 cups sugar
2 eggs, beaten
2 cups cake flour (can use regular all purpose flour)
1 teas. baking powder
½ teas. salt
1 cup sour cream
1 teas. vanilla
2 T. brown sugar
1 teas. cinnamon
Beat margarine and sugar together. Add eggs. Add flour, baking powder and salt. Add sour cream and vanilla. Put in a tube pan that has been sprayed with Baker’s Joy (or greased and floured). Mix the brown sugar and cinnamon (I always mix up a bit more of both) and sprinkle on top of batter. Then push the mixture into the batter so that it is covered up with the thick batter. Bake 55 min. at 350 degrees.
