Baked Sweet Potatoes
5 or 6 sweet potatoes
1 cup sugar
½ cup evaporated milk
¼ cup softened margarine
3 eggs, beaten
1 teas. salt
1 teas. vanilla
Topping:
½ cup brown sugar
½ cup chopped pecans
¼ cup flour
3 T. margarine
Peel and boil sweet potatoes. Cool and mash without anything added. Pour into mixing bowl. Add sugar, evaporated milk, softened margarine, beaten eggs, salt and vanilla. Put into a greased 9x13 pan. Topping: Combine brown sugar, pecans and flour. Cut in margarine until crumbly topping is formed. Sprinkle over potato mixture. Bake 45 minutes at 325 degrees. May be prepared and refrigerated and baked later.
