Lemon Cream Pie
this is a lemon meringue pie, but called lemon cream pie because that is what they called it.
1 cup sugar
5 T. flour
¼ teas. salt
2 egg yolks
1/3 cup lemon juice
1 teas. grated lemon rind
1 ¼ cup water
1 T. butter
2 egg whites, beaten
4 T. confectioner’s sugar
4 T. coconut
1 baked pie shell—9 inch
Blend sugar, flour and salt. Add egg yolks, lemon juice, lemon rind and water. Cook mixture slowly, stirring constantly until thick and creamy. Add butter. Mix confectioner’s sugar into egg whites and beat until creamy. Lightly fold into yolk mixture, pour into pie shell. Sprinkle with coconut. Bake 10 minutes at 325.
